Pemanfaatan Hati Sapi Sebagai Sumber Selenium Sebagai PMT Bebas Gluten, Kasein Dan Gula Untuk Anak Autis Di Mutiara Hati Kertosono
Abstract
Autism or Autism spectrum disorder (ASD) is a complex neurodevelopmental disorder, which is associated with various metabolic disorders. Micronutrients, including selenium (Se), are often used for dietary management in children with autism. Selenium is a mineral with antioxidant properties that work together with vitamin E to prevent free radicals that can damage cell membranes. Selenium deficiency causes decreased immune function and results in increased susceptibility to infection. Beef liver can provide about 28 mcg of selenium per 100 grams of material, contributing 77.78% of the RDA for selenium. Beef liver is cheaper than beef. Considering the potential of beef liver, it can be used to increase selenium intake in children with autistic disorders by providing various types of additional processed beef liver foods every day for 21 days. There are 7 types of processed liver, including sempol, nuggets, pok-pok, rolade, drum sticks, otak-otak, and liver balls. Each type is repeated 3 times during the service. Community service carried out at Mutiara Hati Kertosono Autism Home. The subjects of this community service are 13 children who are undergoing therapy at Mutiara Hati House aged between 3-5 years. To evaluate whether the acceptability of each type of processed liver is evaluated after consumption. The average acceptability is 78.84%, indicating the average acceptance category is good. This liver-processed recipe is the result of menu development from a team of lecturers of diet, culinary and food technology with students of the Nutrition Academy, Karya Husada Kediri, so that it can become a reference for parents whose children have autism.
